The Welsh Saucery Garam Masala Spice Blend with Christmas Leftovers

The Welsh Saucery Great Taste Award 2022 Garam Masala Spice Blend with Christmas Leftovers

Ingredients:

- The Welsh Saucery Garam Masala Spice Blend

- Leftover Christmas turkey or chicken, shredded

- Leftover roast vegetables (carrots, potatoes, parsnips), diced

- 1 onion, finely chopped

- 3 garlic cloves, minced

- 1-inch fresh ginger, grated

- 1 chilli, chopped

- 2 tablespoons vegetable oil

- 1 cup leftover gravy or stock

- Fresh coriander, chopped (for garnish)

 

Instructions:

  1. In a large skillet or frying pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  1. Add the minced garlic, grated ginger and chopped chilli to the pan and cook for an additional minute until fragrant.
  1. Add the leftover shredded turkey or chicken and diced roast vegetables to the pan. Stir to combine with the onion, garlic, ginger and chilli mixture.
  1. Sprinkle the Garam Masala Spice Blend over the turkey and vegetables, stirring well to evenly coat everything. Cook for another 2-3 minutes to allow the flavours to meld together.
  1. Pour in the leftover gravy or stock and bring the mixture to a simmer. Cook for 5-10 minutes, until the sauce has thickened slightly. Season with sea salt and cracked pepper.
  1. Serve the Garam Masala spiced turkey and vegetable mixture hot, garnished with fresh chopped coriander. This dish pairs well with steamed rice or warm bread.

Note: Feel free to adjust the spice level by adding more or less Garam Masala. Additionally, you can incorporate other leftover Christmas ingredients or vegetables to make the dish even more flavourful.
